AAco’s Wagyu Fact Sheet                           
AAco’s Wagyu profile – Australian Agricultural Company (AAco) is Australia’s leading Wagyu producer and has three prestigious Wagyu brands which are sold globally and recommended by some of the world’s finest chefs.  These comprise Darling Downs Wagyu, Kobe Cuisine, Greg Norman Signature and Master Kobe.

Brands:

Darling Downs Wagyu is produced from Wagyu/Angus cross cattle with marble scores ranging from 4 to 5. 

Kobe Cuisine, the tastiest name in beef, is also produced from Wagyu/Angus cross cattle.  Marble scores range from 6+, creating an extraordinary depth of flavour and exquisite texture. 

Greg Norman Signature, a joint marketing agreement between Australia’s legendary golfer and the AAco using higher marble score cattle [6+].

Master Kobe is produced from full blood Wagyu cattle with marble scores of 9+.  This most elite and highly sought brand is only available in limited quantities.

Quality Assurance – AAco’s Wagyu brands are backed by a rigorous quality assurance program which addresses food safety, animal welfare and product quality issues throughout the supply chain.   AAco’s management systems are certified to ISO 9001, stations hold CattleCare accreditation, the feedlots are certified to the National Feedlot Standard and Codex HACCP and the meat is packed and processed in facilities that holds Safe Food, HACCP and ISO 9001 certifications.  Furthermore, AAco has it’s own Product Integrity Program independently audited by Ausmeat.

Breed – The word Wagyu, sometimes referred to as “Kobe”, is derived from the words “wa” meaning Japanese and “gyu” meaning cattle.  AAco’s herd comprises both Wagyu/Angus cross as well as full blood Wagyus with marble scores ranging from 4 up to an elite 9+.

Marbling – the level of marbling varies enormously in Wagyu cattle and their crosses. It is possible for some animals to have very high levels of marbling and others to have next to none; therefore it is important to confirm exactly what marble score you are ordering and receiving.  AAco individually grades each cube roll and striploin and places marble score inserts into each bag.  Grading charts are available explaining the different marbling levels and scores.  More marbling is found in the forequarter cuts, preferred by the Japanese and less in cuts such as the eye fillet and rump.

Grain finished – tightly guarded ration formulations, handed down from cattle feeding masters in Japan are a critical part of AAco’s Wagyu success.  Aronui Feedlot located in the heart of the famous Darling Downs region of Queensland has been grain feeding Wagyu cattle since 1998.  These years of experience have given it the reputation as one of the few specialised Wagyu feedlots in the world.

Our Wagyu cattle are finished on quality grains for a minimum 300~450 days to produce the desired levels of marbling preferred by our customers. Special blends of corn and white grains are the essential ingredients used.

Health Attributes – Wagyu beef is genetically predisposed to intense marbling, and produces a higher percentage of monounsaturated fat than any other breed of cattle.  Unlike other beef, Wagyu is naturally enriched with omega-3 and omega-6 monounsaturated fats.

All our branded Wagyu beef is certified "free from hormone growth promotants". 


Halal – AAco’s Wagyu brands are produced in accordance with the Supreme Islamic Council of Halal Meat in Australia Inc. (SICHMA).
